    Details

    Edison is the hometown favorite. This varietal is named after a town just down the road from the Mill, and was bred by retired English Professor Merrill Lewis to thrive the Skagit Valley's cool and wet maritime climate.

    When you open your bag of Edison, the first thing you'll notice is its beautiful golden color. It has a distinct nutty, buttery flavor that enhances any recipe using all-purpose flour.

    Origin

    This flour largely comes from wheat grown by our friend Bill Myers of Joseph's Granary in Colfax, Washington. Bill's land sits in the dune-like landscape we call the Palouse, a region where the windblown soils of the Dust Bowl have been landing for thousands of years to create rich earth ideal for farming. Bill supplies more than our wheat—he's helping us pioneer a system of traceable “identity preserved” grains that makes sure you know exactly where your flour comes from.Details coming soon!

    Baking Tips

    Even though it's lightly colored, Edison has more bran and germ than a typical all-purpose flour, so it needs an extra 5% hydration. For every cup of water that your recipe calls for, add in an extra tablespoon.

    Blend in Edison at a 20/80 ratio with any of our bread flours for a golden-colored loaf or crust.

    We love blending Edison with 50% Sequoia or Organic 1109 for a tender, pecan-colored pie crust.
