Unlike our higher protein spring wheats, Organic 1109 is planted in the fall. It overwinters in the ground, outcompeting weeds and keeping the soil nourished. The wheat's winter dormancy leads to a lower protein content.
We love to use this flour as a sidekick to enhance the color and flavor of whatever you're baking.


Origin
Organic Skagit 1109 is grown by our partners Tom and Ray Williams of Hudson Bay Farm in Milton-Freewater, Oregon, which sits on the historic original site of the Hudson Bay Trading Company. Two of our very first growers, Tom and Ray are pioneering organic farmers whose ideas have helped revolutionize the sustainable agricultural practices our flour depends on.
Baking Tips
Organic 1109 has more bran and germ than most bread flours, so it needs an extra 5% hydration. For every cup of water that your recipe calls for, add in an extra tablespoon.
For any type of bread recipe, we love to blend Organic 1109 at a 20/80 ratio.
For the recipes calling for all-purpose flours, we blend Organic 1109 at a 50/50 ratio with our Edison or Sequoia. This works for pie crusts and scones, too.
