If you are looking for a single bread flour, Trailblazer is a great place to start. Every year we test out a few new varietals, and we continue to return to this trusted standby for its flavor and function. It's perfect for all of your breads and pizzas, and is used by some of the best bakers in the country, including Tartine, Grand Central Bakery, the Breadfarm and Reunion Breads.
Trail Blazer has a clean wheat flavor that shines in many applications. It creates a rich caramelized crust and a creamy crumb especially well suited to naturally fermented doughs. It’s perfect in hearth loaves, pan loaves, bagels and pizzas. Compared to its organic bread flour counterpart, our Expresso Artisan flour, Trailblazer is a bit milder and will produce a lighter colored crumb on the interior of the bread.
- We’ve really enjoyed blending Trailblazer with our other flours (use Trailblazer 80% of weight) to expand the flavors in our hearth loaves. Add 1109 for color and robust flavor, Edison for a milder nutty and buttery finish, and Sequoia for a softer crust and delicate wheat flavored finish.
- For any recipes that don't require such a strong bread flour, such as focaccia, flatbreads, or an enriched sandwich loaf, blend Trailblazer 50/50 with any of our all purpose or specialty flours, such as Edison, Sequoia, or 1109.
- Trailblazer has more bran and germ than most bread flours, so it will require an additional 5% hydration, or an additional tablespoon per cup of water that your recipe requires.
