    This is an amazing pastry flour. From the unique looking club wheat that thrives in Skagit Valley. It has noticeable corn-like flavor. Fantastic for pastries, pie crusts, cakes, cookies, cinnamon rolls and sweet doughs. For sweet doughs, pie crusts or galettes blend with Edison or Skagit 1109 for more texture and color. 

    Origin

    Cara Club Wheat is grown in the fields of one of our original partners, John Roozen of the Washington Bulb Company. John is not only a leading advocate for soil health and regenerative farming practices. He's also the largest tulip bulb grower in the country! He plants our wheat in between bulb harvests as a way to give his land a break from monoculture crops and disrupt the lifecycles of insects and diseases that would otherwise prey on his flowers.

    Baking Tips

    • Cara has more bran and germ than your typical pastry flour, so it will require an additional 5% hydration, or an additional tablespoon per cup of water that your recipe requires.
    • Blend Cara Club Wheat with Edison or Skagit 1109 for more texture and color. For rich, dark cookies, blend Cara with 1109 at a 1:2 ratio.
