We love our Edison all purpose for its rich, nutty and buttery flavor, beautiful color and its ability to produce very tender crumb in breads and cakes. It was developed by a retired school teacher, and named after a town not far from the Mill.
As a hard white spring wheat, it has a very light, golden colored bran. When mixed with a stronger bread flour, it adds a striking color to our bread loaves. The lightly colored bran and germ make it perfect for sneaking in more nutrition past vigilant kids who insist on white flour. We call it our stealth health flour for this reason.
Compared to our Sequoia all purpose, the Edison will have a milder flavor, produce baked goods that are lighter in color and is slightly lower protein. This makes it a great fit for all of your recipes that call for a lower protein flour, such as sweet breads, cookies, and biscuits.
- Edison has more bran and germ than your typical all purpose flour, so it will require an additional 5% hydration, or an additional tablespoon per cup of water that your recipe requires.
- For breads, we love to blend Edison 20% with a stronger bread flour when making hearth or pan loaves to contribute it’s nutty, buttery flavor, and a blond crumb.
- For pie crusts and cookies, Edison is amazing. Use it alone, or blend it with 1109 for a darker, more caramelized flavor.
