    The Soft Durum Wheat for our Limited Edition Durum Flour was grown by two Skagit Valley farms: Boldy Grown and Hedlin Family Farms. The varietal was chosen for its incredible flavor, softer qualities, disease resistance and ability to grow in our maritime region.

    Our mill is not set up to mill traditional Durum, because of how hard it is (in fact, the word "durum" means hard). When we discovered tests were being done with a softer Durum varietal, we jumped at the opportunity to grow the grain and stone-mill a limited run.

    This LIMITED EDITION Specialty Flour was milled on 10/02/23 and has a 9-month shelf life. 

    Origin

    Primarily grown in Italy and Eastern Europe, Durum is known as one of the hardest wheats available. Our unique Durum Flour is stone-milled from a Durum varietal specifically bred to be softer and easier to mill, in addition to having phenomenal flavor.
