General + Nutrition

What’s the difference between conventional and organic?

Both are grown with care by our partner farmers. Organic follows USDA certified organic standards, while our conventional flours are regeneratively grown with a focus on soil health and long-term sustainability.

How long does flour last?

Shelf life depends on the type of flour and storage conditions. We recommend storing flour in a cool, dry place and using it within a few months for optimal freshness. Our flours are best when fresh and used within 10-12 months of their mill date.

Are your whole grain flours sifted?

No—our whole grain flours are unsifted.

Does stone milling mean higher fiber?

Because we intentionally incorporate all three parts of the wheatberry into our flours, our flours retain their natural fiber and nutrient content.

Do you recommend a flour for low glycemic baking?

We suggest incorporating whole grain flours, which digest more slowly and offer a more balanced nutritional profile. Whole grain flour has a lower glycemic index. If you are focusing on glycemic intake we recommend using a blend with 80% Whole Grain and 20% T85.

Are any of your flours gluten free?

No.

What does “naturally nutritious” mean?

It means there are no additives our enrichments in our flour. Our milling process retains the natural nutrition that resides in the bran and germ.

Are your flours healthier than others?

We focus on quality at every step—from soil to milling—to deliver flour with exceptional flavor and nutritional integrity. Our fresh flour is naturally nutritious. Commodity white and whole wheat flours strip out the bran and germ which contain the nutrition from grains. As a result they must use additives to supplement the nutritional values in their product. We think the nutrition that occurs naturally is better.

Do you sell wheat berries?

Not at this time.

Do you sell sourdough starter?

Not at this time.
