Sequoia is new to our line this year, and we’ve been blown away by its versatility and flavor. As a hard red winter wheat, it’s a little stronger than our Edison, so it can hold its own in a hearth loaf. It also has a pleasing, wheatier flavor and darker color compared to Edison’s light butteriness. Use Sequioia in any recipe calling for all purpose, but we love it in pan loaves, pie crusts, enriched doughs, blended with Trail Blazer for pizza doughs and for egg pasta.
- Sequoia has more bran and germ than your typical all purpose flour, so it will require an additional 5% hydration, or an additional tablespoon per cup of water that your recipe requires.
- Try blending Sequoia with a stronger bread flour for pan and hearth loaves for a more complex flavor.
