The Expresso varietal is a cross between Express, and Yecora Rojo. We love it as an organic varietal because it is very resistant to diseases and rusts.
Unlike whole wheat flours, which still sift out the wheat germ, our whole grain Expresso contains all of the wheat berry--the bran, the germ, and the endosperm. This leads to a more flavorful flour that contains more of the natural nutrition from the wheat berry.

Origin
Organic grains grow better in dryer climates where there’s fewer diseases that may negatively impact the crops. Our Organic Expresso is primarily grown in the rich fertile soil of the Columbia Basin, harvested on land that's primarily dedicated to producing other crops, like onions. Planting grain is a way for the farmers to rest their fields between vegetable harvests and disrupt pests and disease without the need for chemical interventions that can harm the soil.
