Use for: Hearth loaves, pan loaves, baguettes, pizzas, pretzels, , sandwich breads, and bagels.
Expresso is our flagship organic bread flour. Producing dark crusts and crumbs with subtle tones of chocolate and spice, Expresso is our highest protein flour. These things make it a great pick for a hearty, rustic sourdough or yeasted bread.
It has more bran and germ than most bread flours, so it will require an additional 5% hydration, or an additional tablespoon per cup of water that your recipe requires.
- For any recipes that don't require such a strong bread flour, such as focaccia, flatbreads, or an enriched sandwich loaf, blend Organic Expresso with any of our all purpose or specialty flours, such as Edison, Sequoia, or 1109. Our favorite pizza dough combinations is 80/20 Expresso and Organic Edison or Organic 1109. It also makes incredibly favorful pretzels and bagels.

I'd been eager to get my hands into some of Cairnspring Mills flour and was excited to see it finally available for shipping to home users. My first experiments yield most magical and delicious caramelized crusts and soft, nutty crumb. I'm eager to continue experimenting and will definitely order more. And even better, when I drive my girlfriend back home to Seattle in January I hope to coordinate a trip up to Burlington to get 25 kg bags to bring back and share with my baker friends in San Diego.
