Use for: Hearth loaves, croissants, pan loaves, baguettes, Neapolitan pizzas, , sandwich breads, and bagels.
This is a lighter colored, more sifted version of our Trailblazer Bread Flour. Just like Trailblazer, we start with our beloved Yecora Rojo varietal, but sift out a bit more of the bran. This makes it ideal for lighter colored breads and pizzas, as well as for laminated doughs, such as croissants and danishes. If you are looking for a flour that bakes similar to high protein bread flours from other companies, look no further.
- For any recipes that don't require such a strong bread flour, such as focaccia, flatbreads, or an enriched sandwich loaf, blend Glacier Peak 70/30 with any of our all purpose or specialty flours, such as Edison, Sequoia, or 1109.
